Garlic Mustard Pesto

If you have been foraging and gathered a basketful of garlic mustard greens, this pesto recipe is for you! Pesto is easy to make and a versatile addition to many meals. This pesto serves two and is speedily made with a small blender or food processor.

 

  • 100g garlic mustard leaf
  • 100g pine nuts, cashew nuts or olives
  • 250ml olive oil
  • 1 garlic clove
  • 25g (10z) grated parmesan or nutritional yeast
  • 1 tsp lemon juice
  • Salt and pepper

Use a blender to blend the garlic with the oil, then add the chopped leaves and lemon juice. Blend to a paste and season to taste. Spoon into clean jar and refrigerate.
