Salsa Verde
A good Salsa Verde recipe is full of flavour, healthy and so versatile. You can adapt it to your taste and use many different herbs or leafy greens and their stalks. True to its name – Salsa verde means “green sauce” in Spanish and Italian – is packed full of green goodness and packs a nutritious punch!
- 50 Wild garlic leaves approx
- 20 Garlic mustard large leaves approx
- 70 Ground ivy small leaves approx
- 1 Lemon zest and juice
- 200 ml Olive oil
- 2 tablespoon capers
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 1 teaspoon Chilli flakes
Wash and pat dry the leaves then finely chop them
In a bowl combine the salt, pepper and chilli flakes, and lemon zest.
Squeeze the lemon juice into the bowl, then slowly add the olive oil and whisk to emulsify.
Mix the chopped wild greens into the bowl and then the wild garlic capers.
Transfer into a sterilised jar and use as desired!
