Wild Salmon marinated in Middle-Eastern Spices
This is another dish inspired by the ‘Seasonal Kitchen’. The fish is rich in omega 3 oils to support mental health and spices which give this fish a fantastic flavour.
Serves 4
4 tbs olive oil
1 tbs ground cumin
1 tsp smoked paprika
1 tsp chilli flakes
Juice of 2 limes
1 tbs small salted capers, rinsed and drained
2 tbs finely chopped coriander
4 x 150g (5½oz) wild salmon fillets
- Put the olive oil, cumin, paprika, chilli flakes, lime juice, capers and coriander in a bowl. Stir to combine.
- Line a baking tray with baking paper and lay the salmon steaks on top. Spoon the spice mixture over the salmon, then cover and refrigerate for 1 hour.
- Preheat the oven to 180°C (350°F/Gas 4). Bake the salmon for 10 to 15 minutes.
Serve with wholegrain couscous garnished with chopped coriander
