Tomato Flaxseed Crackers

Tomato Flaxseed Crackers

These are delicious  a delicious alternative to traditional savoury biscuits.  They work well with cheese, chicken liver pate and as a wholesome snack with a bit of butter.  They have a wonderful Italian taste!



1 red pepper, roughly chopped

2 tomatoes, roughly chopped

4 sundried tomatoes, roughly chopped

1 red onion, roughly chopped

handful of basil

1 cup whole flaxseed/linseed, soaked overnight juice, freshly squeezed

2-3 tablespoons (or to taste) lemon

1/2 teaspoon sea salt



  1. Place the red pepper, tomatoes, sundried tomatoes, red onion and basil in a food processor and process until fine.  Add the remaining ingredients and blend to form a thick paste.
  2. Spread the mixture on a non-stick sheet (5mm thick/¼ inche thick) and place in your dehydrator.
  3. Set your dehydrator to approximately 45°C/115°F for 5-6 hours.  Remove the non-stick sheet and dry for a further 5-7 hours (or overnight)
