Paleo Bread
This bread has a lovely texture.
Preheat oven to 160°C (250°F)
Ingredients
200g whole almonds (150g ground & 50g left whole)
50g walnuts
50g pumpkin seeds
50g sunflower seeds
50g linseed/flaxseeds
50g sesame seeds
¼ cup olive oil
½ tsp baking soda
½ tsp salt
5 eggs
Instructions
- Line a 1lb loaf tin with parchment paper and place on a baking sheet. Set aside.
- Using a blender, grind the 150g nuts and empty them into a bowl.
- Place eggs into the bowl and mix thoroughly with the ground nuts.
- Add the olive oil to bring to a ‘batter’ consistency. Stir in rest of the nuts, seeds, baking soda and salt.
- Spoon batter into a loaf tin and bake for about 45 minutes to 1 hour (or until a skewer comes out clean)
