Nut Bread Recipe

Preheat oven to 190°C (375°F)

2 ½ cups ground nutsNut Bread

¼ cup melted butter or ¼ cup natural Yoghurt or small amount of fruit juice (add last and adjust amount depending on the consistency of the batter)

½ tsp baking soda

1/8 tsp salt

4 eggs


Line a 1lb loaf tin with parchment paper and place on a baking sheet. Set aside

Using a blender, grind the nuts and empty them into a bowl.

Place eggs into blender and mix thoroughly.

Add the butter/yoghurt/or fruit juice as needed to bring to a ‘batter’ consistency. Blend in baking soda and salt.

Spoon batter into loaf tin. Bake for about 35 minutes or until loaf springs back when pressed.  Remove the loaf from the tin and allow to dry on a drying rack.
