Hummus with Crudities

Hummus with Crudities

1 x 400g / 14oz can of chickpeas, drained and rinsed

1 ½ tsp ground cumin

¼ tsp paprika

2 small garlic cloves, crushed

2 tbs tahina

2 ½ tbs lemon juice (to taste)

½ tsp salt (to taste)

½ tsp tamari sauce

4 tbs extra virgin olive

Pepper to taste


  1. Drain the chickpeas but save the liquid!
  2. Put the chickpeas into a food processor with cumin, garlic, tahina, lemon juice and ½ tsp of salt.
  3. Process to a smooth paste, then, with the machine still running, gradually add the oil through the hole in the lid.
  4. Season to taste with pepper and chickpea liquid to required consistency.

Garnish with a sprinkle of paprika, chopped coriander and olive oil.

Crudities examples – Carrots, Celery, Broccoli, Cauliflower, Cucumber, Peppers etc
