Hummus with Crudities
1 x 400g / 14oz can of chickpeas, drained and rinsed
1 ½ tsp ground cumin
¼ tsp paprika
2 small garlic cloves, crushed
2 tbs tahina
2 ½ tbs lemon juice (to taste)
½ tsp salt (to taste)
½ tsp tamari sauce
4 tbs extra virgin olive
Pepper to taste
Method
- Drain the chickpeas but save the liquid!
- Put the chickpeas into a food processor with cumin, garlic, tahina, lemon juice and ½ tsp of salt.
- Process to a smooth paste, then, with the machine still running, gradually add the oil through the hole in the lid.
- Season to taste with pepper and chickpea liquid to required consistency.
Garnish with a sprinkle of paprika, chopped coriander and olive oil.
