Green Vegetable Crackers
1/4 onion
2 garlic clove
1/2 head spinach (or I use the left over green from my green juice)
1/2 cup fresh green herbs
1 courgette, grated
1 carrot, grated
1 cup flaxseeds, soaked overnight (not drained)
1/2 lemon, squeezed
Salt and pepper to taste
In a food processor, puree onions, garlic, spinach and herbs. Transfer to a mixing bowel and add courgettes, carrots, soaked flaxseed, and lemon juice, salt and pepper to taste. Spread the batter onto the teflex sheets in a dehydrator. Dehydrate for 6 hours at 70 degree, remove the teflex sheets and dehydrate for a further 6 hours or until dry and crunchy.
